Description:

Merlot Dulce 2017 from Pago del Vicario is a unique dessert wine, made from fully ripe Merlot grapes that are harvested late to reach full ripeness and natural sweetness. After careful hand-picking, the grapes are slowly fermented at low temperature to preserve as much aroma and flavour intensity as possible. The wine then ages in stainless steel and partly in neutral oak barrels to refine its soft structure. In the glass this dessert wine shows a deep ruby red colour with purple highlights. The nose opens with aromas of stewed plums, ripe cherries, figs and hints of cocoa, vanilla and light spice. The palate follows with a rich, sultry flavour profile of lush red and black fruit, wrapped in soft tannins and a creamy texture. The balance between sweetness and fresh acidity keeps the wine elegant rather than heavy. The long, silky finish offers hints of dark chocolate, mocha and ripe berries.

Food pairing:

This Merlot Dulce is delicious with chocolate fondant, ripe blue cheeses, vanilla ice cream with red fruit, or as a finale with roasted nuts and dried fruit. Thanks to its complex, gentle character, it is also a wine to enjoy quietly on its own.
