Description:

This Crémant de Bourgogne is produced according to the traditional method, with slow pneumatic pressing, malolactic fermentation in stainless steel and 12–15 months sur lie. In the glass it appears pale gold with a gentle sparkle. The nose offers fresh notes of green apple, pear, citrus and white flowers, with subtle brioche and pastry notes in the background . On the palate the wine shows a refreshing acidity, a creamy mousse and a complexity reminiscent of nuts (almond, hazelnut), with a fine mineral finish

Food pairing:

Elegant as an aperitif. Pair with oysters, prawns, lobster, light fish dishes or soft cheeses. The saline finish goes perfectly with seafood.

Winery:

Prosper Maufoux, founded in 1860 in Santenay and run by Eric Piffaut since 2010, operates from Château de Saint‑Aubin. The estate comprises vineyards in Saint‑Aubin, the Mâconnais and Mâcon‑Igé, and follows sustainable HVE 3 practices. The wines are known for their clean, fruit-driven style, with judicious use of oak and expression of terroir, as well as for the Crémant de Bourgogne
