The grapes are picked by hand in the mild Mediterranean climate around Milazzo, after which fermentation takes place at controlled temperatures of around 26–30 °C with a short skin maceration. After malolactic fermentation the wine matures for several months in stainless steel tanks, followed by at least three months of bottle ageing. In the glass it shows a bright ruby colour with purple reflections, a combination of fresh red fruit, a subtle spiciness and delicate floral accents. The texture is supple with soft tannins and a personified medium-length finish in which notes of rosé and herbs shine .
This wine shows beautifully with grilled chicken or pasta dishes with tomato and herbs, while charcuterie, soft cheeses and generous antipasti also enhance the spicy freshness and fruit depth of the wine.
