The Cuvée XII Brut is the sparkling counterpart of Apostelhoeve's well-known Cuvée XII: a blend of Auxerrois, complemented by Riesling and Pinot Gris, grown on the marl slopes of the Louwberg near Maastricht. In the glass it shows a radiant pale yellow colour with a fine, persistent mousse. The nose is rich and open, with white blossom, tropical fruit, almond and a hint of roses.
On the palate the wine is broad and rich, while a lively acidity brings finesse and freshness. The mousse is velvety, and between the ripe yellow fruit you taste a distinct minerality from the Maastricht marl soil. The finish is long and fresh. A festive yet approachable sparkler that shows what Limburg winegrowing can do.
Ideal as an aperitif, and excellent with oysters and shellfish, sushi and sashimi, ceviche or tempura.
