This Chardonnay comes from the cool Elgin region, which contributes to its fresh, lively flavour. The grapes are picked early in the morning to keep them cool, and the juice is pressed immediately. After pressing, the wine is fermented in French oak barrels of 228 to 300 litres, 33% of them new. After fermentation the wine matures for 10 to 11 months in these barrels, which gives it rich complexity and a creamy texture. In the glass the wine is a light golden yellow, with aromas of oatmeal, lime and toast. The palate is rich and varied, with tropical fruit, vanilla, roasted nuts and a hint of lime zest. The finish is fresh and lively, characteristic of wines from cooler climates.
Grilled veal, pork tenderloin in a creamy mushroom sauce, lobster, pumpkin.
