CIPMA I 2021 from Marisol Rubio is a remarkable white wine from Toledo, made from carefully selected Pedro Ximénez grapes. The wine shines in the glass with a pure golden-yellow colour and a light green sheen that betrays its freshness. On the nose an aromatic palette unfolds in which camomile, jasmine and lavender blend elegantly with ripe apple, peach and tropical notes of pineapple and melon. Subtle hints of fresh bread dough, vanilla and white pepper point to ageing in new oak, while citrus accents and mineral notes bring tension and depth. On the palate the wine is lively and harmonious. The saline touch on the attack is perfectly balanced by juicy fruit and a fresh, well-integrated acidity. The oak influence is subtly present, without overpowering the pure expression of the grape. The texture is creamy and precise, with a long finish in which almond, Fuji apple and spicy nuances linger elegantly. This wine convincingly shows how Pedro Ximénez, traditionally known for sweet wines, can also produce a strikingly layered and gastronomic style when vinified dry.
