Corte Dulce 2018 from Pago del Vicario is a semi-sweet white wine made from Chardonnay and Sauvignon Blanc, the two white grapes grown on the estate on the banks of the Guadiana. A short, cool fermentation is deliberately stopped early, so that some of the natural grape sugars remain in the wine. In the glass the wine shows a lemon-yellow colour with green highlights, clear and radiant. The nose is tropical and fragrant, with lychee, passion fruit and guava and a fresh, herbaceous touch of mint.
On the palate the wine is fruity and balanced: the refreshing acidity keeps the light, natural sweetness nicely in check. Flavours of ripe peach and guava make for a silky, juicy mouthfeel. The finish is fresh and fruity, without becoming heavy. Serve chilled, at 10 to 12 degrees.
Delicious with soft cheeses, pâté, mildly spicy Asian dishes and fruity desserts such as peach tart or tropical fruit salad.
