Description:

The vineyard lies 18 km south-east of Beaune, below the Château of Saint‑Aubin, in a combe that benefits from excellent drainage thanks to its colluvial soils. The vines, planted in 1981 and 1999, face south at an altitude of around 280 m. The grapes are harvested by hand and whole-bunch pressed in a pneumatic press. After 24 hours of static settling at 12 °C, alcoholic and malolactic fermentation take place in oak barrels (30 % new), followed by 12 months of ageing in lightly toasted (‘blonde’) oak. The wine is not racked during ageing

Food pairing:

This refined white Burgundy shows beautifully with grilled sole, scallops or other fish in butter sauce, while tender chicken breast with a creamy sauce or luxurious fish dishes with citrus zest also complement its fresh structure and subtle minerality wonderfully.

Winery:

Prosper Maufoux, founded in 1860 in Santenay and run by Eric Piffaut since 2010, operates from Château de Saint‑Aubin. The estate comprises vineyards in Saint‑Aubin, the Mâconnais and Mâcon‑Igé, and follows sustainable HVE 3 practices. The wines are known for their clean, fruit-driven style, with judicious use of oak and expression of terroir, as well as for the Crémant de Bourgogne
