The Chardonnay Cuvée Barrique from Wijndomein Vlijtingen is classically vinified after the example of the great Chardonnays of Burgundy. Part of the wine ferments and matures for around ten months in new French oak barriques, the rest in stainless steel; this keeps freshness and oak influence in balance. The grapes come from the Ellicht vineyard, at the highest point of Vlijtingen. In the glass the wine shows a lovely pale gold colour with soft green reflections. The nose is taut and appealing, with notes of white flowers, citrus, dairy and vanilla, and an elegant, refined oak aroma.
On the palate the attack is lively and fresh. The wine is supple and builds to a lovely mineral peak, with the oak supporting the fruit without dominating it. The finish is harmonious and balanced, with a light creaminess. A refined white wine that shows what Haspengouw can do with Chardonnay.
Delicious with pan-fried or grilled fish, fish in sauce, pâtés and terrines, starters in cream sauce, poultry and rabbit, and soft cheeses.
