Bell'O 2022 is a gastronomic, vinous sparkling wine from Wijndomein Vlijtingen, made from two thirds Chardonnay and one third Pinot Blanc. It is made using the traditional method and matured for 24 months in bottle in the marl caves of Kanne, after which it was disgorged by hand at the estate. No dosage is added: a true brut nature. In the glass the wine shows a white-gold colour. The nose is mineral and complex, with delicate floral and fruity aromas of lemon balm and lime blossom, and a hint of brioche in the background.
On the palate Bell'O is elegant and soft, with lovely depth of flavour and a remarkably fine, 'satin' mousse that provides lasting freshness. With no dosage, the purity of the fruit and the terroir of Haspengouw come fully into their own. The finish is long and refined.
Suitable as an aperitif, but also a perfect match for poultry with fruit or fish in puff pastry.
