Quirico 2025 is a Pecorino from the Falerio DOC, sourced from hillside vineyards in the province of Ascoli Piceno, in the south of the Marche. The grapes grow on firm, clay-rich soils with a south-easterly exposure. After a gentle pressing the must ferments at a controlled temperature; the wine then matures for three months in stainless steel and at least two further months in bottle. The colour is straw yellow. The nose is intense and persistent, with white fruit and flowers, including acacia and broom.
On the palate the flavour follows the nose: fresh, with a fine balance between lively acidity and salinity. The structure is delicate and the flavour lingers for a long time. The finish ends on a light bitter note that gives the wine tension. A characterful, aromatic white wine from a native grape that is rapidly gaining ground in the Marche.
Delicious as an aperitif and with fish dishes, vegetable soup, medium-aged cheese and the stuffed, deep-fried olives of Ascoli (olive all'ascolana).
