This Blanc de Blancs from Pommery's Apanage range is made exclusively from Chardonnay grapes sourced from selected terroirs in the Côte des Blancs and the Montagne de Reims. The wine has a bright, pale gold colour with a silvery sheen. The nose is refined and fresh, with floral aromas of acacia, lime blossom and jasmine, supported by notes of citrus, pomelo and a hint of frangipane. On the palate a pure, lively structure unfolds: fresh citrus fruit and green apple dominate, with subtle brioche and vanilla in the background, the result of at least 42 months of ageing sur lie. The texture is soft and creamy with a fine, persistent mousse. The long, mineral finish brings elegance and freshness.
Perfect with scallop carpaccio, grilled sea bass, asparagus risotto or as a stylish aperitif with caviar or oysters.
