Description:

Délice de Bouzy is a Grand Cru champagne from Bouzy, made from equal parts Pinot Noir and Chardonnay. The grapes come from vines halfway up the slope, are hand-picked and pressed as whole bunches. A cool fermentation is followed by malolactic fermentation in temperature-controlled stainless steel tanks; blending wines from several years keeps the style consistent. In the glass it shows a golden-yellow colour with a beautiful sheen. The nose is powerful and typically Bouzy, with ripe and candied fruit and notes of gingerbread.

On the palate the champagne is full and powerful, with flavours of quince jelly and plum. A soft but clearly present acidity provides good balance, and the dosage of 8 grams per litre keeps everything dry and harmonious. The finish ends with a fresh citrus note reminiscent of grapefruit.

Food pairing:

Delicious as an aperitif and with foie gras on toast; also lovely with poultry or soft, creamy cheeses.
