Cuvée Louise Parcelles is Pommery's prestige cuvée, made from a selection of the best plots in the three grands crus of Aÿ, Avize and Cramant. Only the finest bunches are used, and the wine is made only in good years. In the glass it shows a clear, brilliant colour with very fine, delicate bubbles. The nose opens floral, with lime blossom and hawthorn, followed by peach and pear and then a buttery richness with hints of vanilla and toasted hazelnut.
On the palate the attack is powerful yet perfectly balanced, with a silky texture and a fine minerality. The Chardonnay from Avize and Cramant brings tension and finesse, while the Pinot Noir from Aÿ provides body and length. The whole is harmonious and elegant, with a long finish that ends in a delicate bitterness. A refined, gastronomic Champagne that also lends itself well to further ageing.
Delicious with scallops, langoustines or poultry with a creamy sauce, and with a young Comté.
