Conte Giangirolamo is the flagship of Tenute Girolamo: a blend of 50% Primitivo and 50% Negroamaro from the Valle d'Itria. The vineyard lies at 450 metres above sea level, on limestone mixed with red earth. This 2019 magnum already has several years of bottle age behind it. In the glass the wine shows an intense ruby-red colour. The nose is fruity, with cherry, blackberry and blueberry, elegant herbs and a refined touch of vanilla and cocoa.
On the palate the wine is dry, full and harmonious, with generous fruit and well-integrated tannins. Eighteen months in French barriques and six months in bottle give depth and structure. The larger format lets the wine mature gently, so it gains in complexity. The finish is long and lingering. It pays to open or decant it well in advance.
Ideal with festive dishes such as roast leg of lamb or beef, rich pasta dishes with ragù and mature cheeses.
