This Chenin Blanc comes from vineyards on the 'Constantia' farm in Swartland, known for their low yields of around 6-7 tonnes per hectare. The vines benefit fully from the cool sea breeze, which keeps summer temperatures between 20 and 30 degrees. The grapes are picked in the morning to preserve their freshness and are given three hours of skin contact before pressing. Fermentation takes place at 12 degrees for three weeks, 30% in stainless steel tanks and 70% in oak barrels. After four months of ageing the wines are blended. The result is a lemon-yellow wine with aromas of apricot, peach and subtle hints of vanilla and oak. The palate is fruity with plenty of stone fruit, complemented by delicate oak notes and a fresh lime finish.
This wine pairs excellently with French onion tart, camembert and oven-roasted chicken.
