The Premier Cru “La Comme” vineyard, set on limestone-rich, south-east-facing slopes, yields Pinot Noir grapes with excellent ripeness as well as freshness. After hand harvesting, the grapes undergo a cold maceration, followed by alcoholic and malolactic fermentation in French oak barrels, 20% of them new, and subsequently 10 months of barrel ageing. In the glass it shows bright ruby tints, and on the nose notes of white red fruit and light floral accents. The palate is mouth-filling yet fresh, with finely integrated tannins, subtle spice and a soft, mineral finish.
This elegant Santenay Premier Cru is an excellent match for grilled red meat or wild boar, and makes a refined combination with poultry in a rich jus or creamy mushroom risotto thanks to its fresh acidity and supple structure.
