Carus Vini
Carus Vini
Carus Vini is a young, ambitious winery in the heart of Chianti Classico, located between San Casciano Val di Pesa and Mercatale in Tuscany. The estate covers about 26 hectares, of which just over 13 hectares are planted with vines, alongside olive groves that add to the authentic Tuscan character of the estate. The Carissimo family, originally active in farming in southern Italy, moved to Tuscany in the late 1990s and built a modern wine project here step by step, with respect for tradition and terroir.
Carus Vini is fully committed to organic and sustainable viticulture. The vineyards are managed with minimal impact on nature, without excessive use of chemicals. In the cellar, the winery combines modern technology with classic Tuscan winemaking traditions. It works with precision agriculture, natural enzymes in the vineyard and solar panels for its energy supply. The focus is on producing wines full of character that are a pure reflection of the Chianti Classico terroir.
Alongside traditional Chianti Classico, Carus Vini also produces several Super Tuscans based on international grape varieties such as Cabernet Sauvignon, Merlot and Syrah. Wines such as Robèo, Agapitòs and Téspero show the versatility of the Tuscan terroir and combine elegance with power and ripe fruit. The winery also experiments with innovative techniques, including underwater ageing of wine in collaboration with Jamin UnderWaterWines, with which it introduced one of Italy’s first underwater-aged Chianti Classicos.
Carus Vini’s philosophy revolves around authenticity, sustainability and finesse. Every wine is made exclusively from estate-grown grapes, with great attention to detail in both vineyard and cellar. The result is modern Tuscan wines with a clear identity, in which elegance, terroir expression and drinking pleasure take centre stage.
